PeQu Acorn-Fed Iberian Pork Jawl (Carrillera Iberica de Bellota)

The "carrillera" is the muscle that gives mobility and hold up the jaw of the iberian pig. Its meat is gelatinous and requires a prolonged coocking, although it can be grilled, roasted or fried.
This meat comes from Iberian Acorn-Fed porks that roam freely in the meadows"Dehesas".
Each piece weigths around 150 grams. Frozen item.

RECIPE: IBERIAN PORK JAW WITH OLIVE PURÉE
Ingredients:
Iberian pork jaws
Onion
Carrots

Cook olive oil, onion and carrots until the mix is well done.
Clean the iberian jaws, spread them with flour and fry them slightly.
Add jaws to the pot with the previous mix, covering all with red wine and let them in slow cooking during 45 minutes.
Save the mix and make potatoes purée with olive oil.
